You might think of pasta salad as a mayonnaise- or oil-covered concoction packed with carbs and calories. Or, maybe you’ve have had healthier pasta salads loaded with vegetables and herbs. But have you ever tossed your favorite noodles with salsa, avocado and mango? If not, it’s time to give this zesty combination a try! Plus, for even more flavor and nutritional goodness, sub in black bean pasta instead of the traditional wheat-based kind.

Black Bean Pasta Salad with Mango & Avocado

Ingredients

1 package Explore Asian Black Bean Pasta
Vitacost Salsa
1 head of lettuce, sliced
1 avocado, cut into cubes
1 mango, cut into cubes
1 cup fresh cilantro
Lime, to serve

Directions

  1. Prepare black bean pasta according to package direction.
  2. Meanwhile, in a large bowl, combine lettuce, diced avocado, diced mango and cilantro.
  3. When pasta is done cooking, drain water and mix in salsa. Use a knife to chop pasta into 2-inch pieces.
  4. Transfer pasta to salad bowl and toss until combined.
  5. Serve with fresh lime and Vegan Sour Cream.
