They’ve been seen hanging out in cobblers. They’ve even made a few appearances on a bed of spinach with goat cheese. But you’ve probably never noticed uniquely shaped blackberries sitting pretty around a dessert bar. In this summer-inspired treat, blackberries get drunk on limeade. With only 109 calories per square, you’ll be intoxicated, too (in a good way).
Blackberry Limeade Blondies

Ingredients
½ cup blackberries
3 Tbsp. lime juice
2 Tbsp. cashew butter
3 Tbsp. unsweetened almond milk
¼ cup plain Greek yogurt
4 egg whites
1 ½ scoops Vitacost ARO Vanilla Whey Protein Powder
1 ¼ cups whole wheat pastry flour (or gluten-free flour)
¾ cup almond meal flour
1/3 cup Vitacost Xylitol
2 tsp. baking powder
Lime glaze
¼ scoop Vitacost ARO Vanilla Whey Protein Powder
1 Tbsp. Vitacost Powdered Sugar
Juice of ½ lime
Directions
- Preheat oven to 350 degrees F and line a 9” x 9” baking dish with parchment paper.
- In a food processor, blend half of the blackberries, lime juice, cashew butter, milk, yogurt and egg whites until completely smooth.
- In a large bowl, stir together protein powder, flours, xylitol and baking powder.
- Pour liquid ingredients into the bowl of dry ingredients and stir until well combined. Carefully stir in the remaining blackberries and mix well.
- Pour batter into prepared baking dish, smoothing down with a spoon or spatula. Bake 25-28 minutes, or until golden brown on top.
- To make optional limeade glaze, add all glaze ingredient to a small bowl and stir to combine. Add more of any ingredient until you’ve created the perfect sweet-and-tangy balance.
- Drizzle glaze over cooked blondies, slice into 16 even squares and serve warm.
Not a fan of lime? This recipe works just as well with lemon. You can even swap the limeade glaze for a refreshing lemonade glaze!
