Not only does the vanilla-infused flavor couple with that cup of Joe, you could eat two servings before matching the calories and carbs of a croissant.

Blackberry-Vanilla Breakfast Bars
Makes 16 breakfast bars

Ingredients
¼ cup all-natural cashew butter
¾ cup blackberries
½ cup unsweetened almond milk
¼ cup plain Greek yogurt
4 egg whites
1 tsp. vanilla extract
1 ½ scoops vanilla protein powder
1 ¼ cups whole wheat pastry flour (or oat flour)
¾ cup almond flour
1/3 cup xylitol
2 tsp. baking powder
Directions
- Preheat oven to 350 degrees F and line a 9” x 9” baking dish with parchment paper.
- In a food processor or blender, combine cashew butter, blackberries, almond milk, yogurt, egg whites and vanilla until completely smooth.
- In a large bowl, stir together remaining (dry) ingredients.
- Add liquid ingredients to dry and stir until well combined.
- Pour batter into baking dish, using a spoon to smooth it down evenly. Bake 28-32 minutes, or until the top turns golden brown.
- Slice into 16 even squares. Serve for breakfast with fresh-brewed coffee and blackberry jam.
