The downside: you have to drop your favorite breakfast quick bread in the process…or do you? Instead of depriving yourself, find comfort in these made-over blueberry-cinnamon muffins. No, they aren’t topped with a sugar crumble a la your local bakery. But, you’ll certainly save yourself from a costly habit that’s eating away at your budget and your healthy living goals.
Ingredients
1 cup almond flour
1 cup oat flour
½ cup coconut sugar
¼ cup honey
¼ cup almond milk
1 tsp. vanilla flavoring
1 tsp. cinnamon
1 tsp. baking powder
2 eggs
½ cup fresh blueberries
Directions
- In a large bowl, mix all ingredients except blueberries. Stir until combined.
- Carefully, fold in berries.
- Spoon batter into paper-lined muffin cups or greased muffin pan, filling ¾ full.
- Bake at 350°F for 20-25 minutes, or until a toothpick comes out clean.
