Blueberry-Peach Protein Muffins
Makes 8 muffins

Ingredients
2/3 cup oat flour
1 scoop ARO Vanilla Whey Protein Complex Plus Powder
1 tsp. baking powder
Pinch of salt
3 Tbsp. Vitacost All Natural Smooth & Unsalted Almond Butter
3 Tbsp. honey
¼ cup plain Greek yogurt
2 Tbsp. unsweetened almond milk
1 egg
½ cup blueberries
½ cup diced peaches
Directions
- Preheat oven to 350 degrees F and prepare a muffin pan with 8 paper liners (or place silicone muffin liners on a sheet pan).
- In a large bowl, whisk together almond butter, honey, yogurt, milk and egg until smooth.
- Mix in oat flour, protein powder, baking powder and salt until well combined. Stir in fruit.
- Spoon batter into muffin liners, dividing evenly.
- Bake 22 – 26 minutes, or until a toothpick comes out clean. Let cool for 10 minutes before eating.
Substitution notes:
- Can swap honey for maple syrup or agave
- Can swap oat flour for regular whole-wheat flour
- Can swap almond milk for milk of choice
Baking note:
If using a 12-cup muffin tin or two, 6-cup muffin tins, fill empty cups half-way with water to help ensure muffins bake evenly.
