Their crisp, nutty edges blend into a soft, shortbread center that melts – like buttah – in your mouth. That caramel-tinted sugar will never go to waste again.
Butter Pecan Cookies
Ingredients
1 cup almond flour
2 Tbsp. light brown sugar
2 Tbps. ghee
½ tsp. baking soda
1 tsp. vanilla
1 egg yolk
1 cup unsalted pecans, crushed
Directions
- In a large bowl, combine all ingredients (except pecans) until smooth and thoroughly mixed.Stir in crushed pecans
- Roll dough into balls, place on greased baking sheet and use your hands or a fork to flatten balls into cookies. Top each with a whole pecan for decoration (optional).
- Bake 8-10 minutes, or until golden and crisp on top.
