Skip down memory lane with these classic treats, made with brown rice cereal and wholesome peanut butter instead of the sugary, non-vegan marshmallows in the recipe you enjoyed as a kid.
Cacao-Peanut Butter Crispy Treats
Ingredients
3/4 cup unsweetened cacao powder or cocoa powder
2 Tbsp. boiling water
1/4 cup cacao nibs or 85% dark chocolate chips
1/2 cup natural peanut butter (unsweetened)
3-1/2 cups puffed brown rice
Optional: 1 Tbsp. coconut oil, optional
Directions
- In a small bowl, combine cacao powder and boiling water, adding coconut oil if desired, and mix to a smooth paste.
- In a sauce pan over low heat, warm peanut butter and stir in cacao mixture.
- Pour cereal into large bowl. Pour heated peanut butter-cacao mixture over cereal and stir to combine.
- Shape mixture into balls or pour onto a baking sheet and press down, cutting into squares when cool.
