Cauliflower Soup with Coconut Milk

Makes 3 cups

Ingredients

1 Tbsp. olive oil
1/2 cup bell peppers, diced
1 shallot, diced
1 garlic clove, crushed
11 oz. culinary coconut milk
10 oz. cauliflower florets (fresh or frozen)
1 tsp. ground cumin
1/2 tsp. pink salt
1/4 tsp. black pepper
Fresh cilantro, chopped
Pinch cayenne, optional

Directions

  1. In a medium saucepan over medium-low heat, add olive oil. Add peppers, shallot and garlic.
  2. Pour in coconut milk and stir in cauliflower and spices.
  3. Bring to a boil and reduce heat to simmer 20 minutes.
  4. To serve, top with chopped cilantro.
