Chai Chia Pudding with Cranberries

When it comes to healthy, on-the-go breakfasts, it doesn’t get much easier or more nutritious than chia puddings. Simply mix ingredients together and let them sit overnight; when you wake, you’ll have a wholesome, nutrient-rich breakfast you can grab as you run out the door. What’s more, thanks to the ultra-absorbent nature of chia seeds, they’ll soak up the flavor of whatever they’re mixed with. In this recipe, we add coconut milk, cranberries and chai tea for a burst of spiced, dessert-like goodness in each spoonful.

Chai Chia Pudding with Cranberries

Serves 2

Ingredients

1 can light coconut milk
3 bags chai tea
½ cup dried cranberries
¼ cup chia seeds

Directions

  1. In a small sauce pan, bring coconut milk to a boil. Once milk begins to boil, immediately remove pot from heat and place in tea bags to steep.
  2. Add dried cranberries to hot tea and allow to steep for 30 minutes.
  3. After 30 minutes, stir in chia seeds. Cover and place in fridge at least 2 hours or up to overnight.
  4. Before serving, remove tea bags and stir well.

Note: If pudding is too runny, just add more chia seeds.
