When it comes to healthy, on-the-go breakfasts, it doesn’t get much easier or more nutritious than chia puddings. Simply mix ingredients together and let them sit overnight; when you wake, you’ll have a wholesome, nutrient-rich breakfast you can grab as you run out the door. What’s more, thanks to the ultra-absorbent nature of chia seeds, they’ll soak up the flavor of whatever they’re mixed with. In this recipe, we add coconut milk, cranberries and chai tea for a burst of spiced, dessert-like goodness in each spoonful.
Chai Chia Pudding with Cranberries
Serves 2
Ingredients
1 can light coconut milk
3 bags chai tea
½ cup dried cranberries
¼ cup chia seeds
Directions
- In a small sauce pan, bring coconut milk to a boil. Once milk begins to boil, immediately remove pot from heat and place in tea bags to steep.
- Add dried cranberries to hot tea and allow to steep for 30 minutes.
- After 30 minutes, stir in chia seeds. Cover and place in fridge at least 2 hours or up to overnight.
- Before serving, remove tea bags and stir well.
Note: If pudding is too runny, just add more chia seeds.
