Cherry Protein Pancakes with Crushed Pecans
Macros: 285 calories | 15.2 g net carbs | 42.4 g protein
Ingredients
1 scoop Quest Vanilla Milkshake Protein Powder
1 tsp. baking powder
1/8 tsp. cinnamon
1/8 tsp. salt
5 dried cherries, finely diced
1 pecan, smashed into small pieces
¼ cup egg whites
5.3 oz. Dannon Light & Fit Greek Cherry Yogurt, divided
1 tsp. Sweet Spreads Cinnamon Roll Coconutter, melted
1/8 tsp. almond extract
Directions
- In a high-speed blender, add protein powder, baking powder, cinnamon, salt, egg whites, half of the yogurt, Coconutter and almond extract. Process until smooth.
- In a skillet coated in non-stick spray, drop a ¼ cup of batter. Sprinkle with some diced cherries. Flip when pancake bubbles and flip and cook the other side. Repeat with remainder of batter.
- Before serving, top each pancake with remaining yogurt, diced cherry and pecan bits. Add whipped topping, is desired.
