Chewy Protein Peanut Butter Cookies

The crisscross pattern is so distinct. There could be a table covered in various cookies, and you’d spot the peanut butter treats a mile away. They practically sell themselves, though you could up the wow factor just a crumb. Tell people your special recipe creates over a dozen delicious, low-cal cookies and comes in at only 1 gram of sugar per serving. If anyone was wavering on account of guilt, that should stick a fork in their decision – done and done!  

Peanut Protein Cookies Recipe

Chewy Protein Peanut Butter Cookies

Makes 16 cookies
Macros per cookie: 72 calories | 3.4 g protein | 9.2 g carbs | 3.2 g fat | 1 g sugar | 1.2 g fiber

Ingredients

¾ cup ARO Vanilla Whey Protein Complex Plus
¾ cup whole wheat pastry flour
¼ cup Vitacost Xylitol
½ tsp. baking powder
1/3 cup Vitacost Certified Organic Smooth & Unsalted Peanut Butter
¼ cup vanilla almond milk
1 tsp. vanilla extract
1 egg white

Directions

  1. Preheat oven to 350 degrees F and line a sheet pan with foil. Coat foil with non-stick cooking spray.
  2. In a large bowl, whisk together peanut butter, almond milk, vanilla and egg white until smooth.
  3. Add remaining ingredients and stir thoroughly. Dough will be thick, so use your hands to knead it together. Mix until a large ball of dough is formed.
  4. Pull out about 1 ½ tablespoons of dough and roll into a ball between your hands. Place each cookie ball on prepared sheet pan, making 16 cookies in all.
  5. Using a fork, press down on each cookie to form a crisscross pattern.
  6. Bake 6-8 minutes, or until golden and crisp on top. Serve immediately, because they’re better warm!
