Vegetarian Chili-Peanut Noodle Bowl


This noodle dish is all about flavor. From fresh ginger and spicy chili to sweet honey and savory peanut, it’s sure to satisfy even the pickiest of palates. If you’re feeling creative in the kitchen, feel free to pile on your favorite veggies such as cabbage, shredded carrots, peas, broccoli and crisp bean sprouts. You can even toss in baked tofu and sesame seeds for some added protein.

Peanut Rice Noodle Soup with Veggies |

Serves 4; 377 calories per serving


8 oz. Asian noodles or linguine
1/2 cup organic vegetable broth
3 Tbsp. Simple Truth Organic Shoyu Soy Sauce
3 Tbsp. Simple Truth Organic Creamy Peanut Butter
1-1/2 Tbsp. fresh ginger, minced
1-1/2 Tbsp. honey
2 tsp. chili paste
1/2 tsp. crushed red pepper flakes
1 tsp. garlic, minced
2 green onions, chopped
1/4 cup roasted peanuts, chopped


  1. Bring large pot of water to boil. Add noodles and cook until firm to the bite. Drain and set aside.
  2. In large saucepan, combine broth, ginger, soy sauce, peanut butter, honey, chili paste, crushed red pepper flakes and garlic. Cook over medium heat until peanut butter melts and is heated through.
  3. Add noodles; toss to coat. Garnish with green onions and peanuts.
