Hearty Vegetarian Chili With Pumpkin

Ingredients
- 2 Tbsp. avocado oil
- 1/4 cup onion chopped
- 1/2 cup bell pepper diced
- 1/2 cup carrots shredded
- 1-2 garlic cloves minced
- 1/2 tsp. paprika
- 1-1/2 tsp. chili powder
- 1 tsp. ground cumin
- 2 cans 30 oz. vegan chili
- 8 oz. pumpkin puree
- 2 cans 10 oz. tomato paste
- 1/2 cup vegetable broth
Instructions

In large pot over medium-high heat, add oil.

Add garlic, onion, pepper, carrots and spices. Sauté until softened.

Add chili and cook for 5 minutes.

Stir in broth, tomatoes, pumpkin puree and bring to boil.

Cover and reduce heat to simmer and cook for 15-20 minutes.

Serve with garnishes of choice.
