Chipotle & Quinoa Vegan Burger

You’ll drive right past the drive-thru once you’ve tried this healthy vegan alternative to ordinary burgers. Made from a blend of cooked quinoa and black beans, it’s hearty enough to satisfy even the hungriest fast-food seekers, with a splash of chipotle sauce for a gourmet touch and a spicy twist. Don’t like the heat? Turn it down with a dollop of guacamole, which pairs perfectly with the subtle, south-of-the-border flavor.

Quinoa Chipotle Vegan Burger

 

Ingredients

1 cup quinoa
1/4 tsp salt
1 can of black beans
1 tsp ground cumin
3 green onions, chopped
olive oil
1/3 cup chipotle sauce
1/4 tsp black pepper
1/2 cup gluten-free flour

1.) Combine the quinoa, water and ¼ teaspoon salt in a sauce pan. Bring water to a boil and cook for 10-15 minutes. Let quinoa sit for 5 min and then fluff with a fork.

2.) Place black beans in a food processor with the ground cumin, green onions, chipotle sauce, and ¼ teaspoon of pepper. Pulse until mixture is smooth.

3.) Add the bean mixture with the quinoa and 6 tbsp of flour and stir.

4.) Roll, flatten and make 6 patties.

5.) Add oil on medium heat.  Place the patties into flour and coat both sides. Add them in the skillet and cook for 5 to 7 minutes or until browned.
