Chocolate Chip Cookie Dough Protein Pancakes

You know you have a busy week ahead, and you’re dreading it. The morning is moving in slow-mo, because you can’t drum up enough motivation to get going. That’s when you need a big stack of flapjacks. Stuffed with cookie dough-flavored fluff and infused with protein, these pancakes will instantly bring a smile to your face – and some wind in your sails.  

Chocolate Chip Recipe: Pancakes with Cookie Dough Cream

Chocolate Chip Cookie Dough Protein Pancakes

Makes 1 serving of 5 pancakes with fluff

Macros per serving (extra chocolate chips and chocolate syrup not included)
433 calories | 33.7 g protein | 32.2 g carbs | 20.6 g fat | 7 g fiber | 3.7 g sugar

Pancakes:

¼ cup oat flour
½ scoop Giant Sports Delicious Vanilla Shake Protein Powder
2 Tbsp. cacao nibs
½ Tbsp. cashew butter
3 Tbsp. unsweetened vanilla almond milk
2 egg whites
1 tsp. vanilla extract
1 tsp. butter extract

Cookie Dough Fluff:

1 Tbsp. almond meal flour
2 Tbsp. xylitol or stevia
½ Tbsp. cashew butter
2 Tbsp. ricotta cheese
¼ tsp. butter extract

Toppings (optional):

Mini chocolate chips
Chocolate syrup

 

Directions

  1. In a large mixing bowl, combine all pancake ingredients and whisk until batter is completely smooth.
  2. Heat a nonstick skillet over medium heat. Pour spoonfuls of batter onto hot skillet, making 5 small pancakes. Cook until slightly golden brown on both sides, about 2 minutes per side.
  3. In a blender or food processor, combine all fluff ingredients and blend until completely smooth. Spread cookie dough fluff on top of each pancake, creating a tower of pancakes if you’d like.
  4. Add toppings if desired and eat!
