Chocolate Chip & Sunflower Seed Butter Protein Cookies
Ingredients
1 + ½ cup white beans
½ cup sunflower seed butter (unsweetened)
¼ tsp. pink salt
½ tsp. baking powder
½ cup coconut sugar
¼ cup brewed coffee
1 tsp. vanilla
½ cup dairy free chocolate chunks
Directions
- Preheat oven to 350 degrees F. Line baking sheet with parchment paper.
- In food processor, combine beans, sunflower seed butter, salt, and baking powder in food processor and blend until smooth.
- Dissolve coconut sugar into coffee (coffee can be warm), then add to food processor.
- Add vanilla and process ingredients until well combined.
- Pour in chocolate chips and pulse food processor to stir in.
- Use a mini ice cream scoop to scoop up dough and place on baking sheet.
- Bake cookies fro 20 minutes. (Note: Cookies will be soft on the inside and slightly firm on the outside.)
