Chocolate Chip & Sunflower Seed Butter Protein Cookies

When life gives you white beans… make chocolate chip cookies. (Yes, you read that correctly.) White beans are the secret ingredient you never knew your cookies were missing. These legumes add a healthy boost of protein and fiber, making this version completely guilt free. Plus, coffee is added to the dough to enhance the rich, chocolaty flavor. Chocolate Chip & Sunflower Seed Butter Protein Cookies 

Ingredients

1 + ½ cup white beans
½ cup sunflower seed butter (unsweetened)
¼ tsp. pink salt
½ tsp. baking powder
½ cup coconut sugar
¼ cup brewed coffee
1 tsp. vanilla
½ cup dairy free chocolate chunks

Directions

  1. Preheat oven to 350 degrees F. Line baking sheet with parchment paper.
  2. In food processor, combine beans, sunflower seed butter, salt, and baking powder in food processor and blend until smooth.
  3. Dissolve coconut sugar into coffee (coffee can be warm), then add to food processor.
  4. Add vanilla and process ingredients until well combined.
  5. Pour in chocolate chips and pulse food processor to stir in.
  6. Use a mini ice cream scoop to scoop up dough and place on baking sheet.
  7. Bake cookies fro 20 minutes. (Note: Cookies will be soft on the inside and slightly firm on the outside.)
