Chocolate Chunk Protein Ice Cream
Serves 4
Macros per serving: 91 calories | 2.5 g net carbs | 12 g protein
Ingredients
1 scoop Quest Chocolate Milkshake Protein Powder
¼ cup Swerve Confectioner’s Style Erythritol
2 Tbsp. cacao powder or cocoa powder
1/8 tsp. cinnamon
2 cups Silk Cashew Milk
1/8 tsp. vanilla extract
1 Quest Double Chocolate Chunk Bar, diced into small chunks
Whipped topping, optional
Directions
- In a high-speed blender, blend protein powder, erythritol, cacao powder, cinnamon, cashew milk and vanilla.
- Add mixture to a 2-quart ice cream maker and churn for 20-25 minutes, adding protein bar chunks in the last few minutes. (If you don’t have access to an ice cream maker, pour mixture into a baking or casserole dish and freeze, stirring every 30-45 minutes until desired consistency is reached.)
- Scoop a ¾ cup per serving and top with whipped topping, if desired.
