Chocolate Chunk Protein Pancakes
Makes 3 pancakes

1 scoop Quest Multipurpose Protein Powder
2 Tbsp. erythritol
2 Tbsp. Spectrum Essentials Chia & Flax Decadent Blend with Coconut & Cocoa
1 tsp. baking powder
1/3 cup egg whites
1 Quest Double Chunk Chocolate Protein Bar, diced
Walden Farms Maple Pancake Syrup, to serve
- In a high-speed blender, combine protein powder, erythritol, chia and flax blend, baking powder, cinnamon, egg whites and vanilla until batter is thick and fluffy.
- Spray a frying pan or skillet with nonstick spray.
- Heat pan and add a fourth cup of batter. Push a third of the protein bar pieces into the top of the batter. When bubbles appear, flip and cook other side until golden brown. Repeat for the remainder of the batter and protein bar pieces.
- Stack pancakes and top with maple syrup.
