Chocolate Coconut Milk & Avocado Ice Cream

When you were a kid, you loved ice cream on hot days. It always dripped off the cone onto your hand, so Mom made you eat outside. You didn’t argue, of course. Eating outside added excitement to the experience. You’re all grown up now, so you might have cut back on your dairy consumption, or maybe you’ve even cut it out completely. But that doesn’t mean you have to miss out on the summer fun. When you need a cool treat, make this creamy dessert. Go ahead and eat outside—you’ll feel like a kid again.

Chocolate Coconut Milk & Avocado Ice Cream

Serves 6

Ingredients

1 can full-fat coconut milk, refrigerated overnight (solid bits only)
1 medium avocado
¼ cup cacao powder
¼ cup maple syrup
½ tsp. vanilla
Pinch salt

Directions

  1. In a food processor, combine all ingredients, using only the solid bits of the coconut milk. Reserve the liquid for another use. Process until smooth.
  2. Transfer to a container and cover. Freeze for at least 2 hours, or freeze longer for a more solid consistency.
  3. To serve, scoop out from container and top with berries.
