Chocolate-Coconut Protein Bars
Makes 7 bars

Ingredients
4 scoops Quest Chocolate Milkshake Protein Powder
½ cup Swerve Granular Erythritol
¼ cup Nutiva Coconut Flour
¼ cup cocoa powder
1/8 tsp. cinnamon
1 oz. Lily’s Dark Chocolate Chips
1 cup Silk Cashew Milk
¼ cup Sweet Spreads Chocolate Brownie Coconutter, melted
1/8 tsp. vanilla
3 Tbsp. shredded coconut
Directions
- In a large bowl, combine protein powder, Swerve, coconut flour, cocoa powder and cinnamon.
- In a smaller bowl, combine cashew milk, melted Coconutter and vanilla. Add wet ingredients to the dry and mix until well combined. Gently fold in chocolate chips.
- Scoop out batter into 7 equal balls (about 3.5 oz. each) and shape into bars. Use additional flour or non-stick spray as necessary to prevent the batter from sticking to your hands.
- Spray the tops of the bars with non-stick spray and sprinkle with shredded coconut.
- Chill for at least one hour.
