Whether you’re trying to curb late afternoon cravings or make a healthy dessert choice after a well-portioned meal, these cookies will satisfy your sweet tooth so completely, you’ll have no idea they’re also packing over 5 grams of protein.

Ingredients

2 Quest Coconut Cashew Protein Bars
2 Tbsp. reduced-fat shredded coconut
8 squares of Lily’s Dark Chocolate Coconut Bar

Directions

  1. Preheat oven to 350 degrees and line a cookie sheet with a Silpat or parchment paper.
  2. Break Quest bars into 4 equal parts (8 total) and flatten.
  3. Place a chocolate square in the middle of each flat piece. Wrap around chocolate and roll into a ball.
  4. Roll balls in shredded coconut and place on baking sheet. Sprinkle leftover shreds on top of cookies.
  5. Bake for 7 minutes.
