Chocolate Hazelnut Crispy Cookies

Anyone who has walked by a bakery has spotted those gigantic chocolate chip cookies. (They’re the size of your face. How could you miss them?) You probably moved right along, thinking that’s too much to take on. Or maybe you know you could eat the whole thing, so you avoided the temptation completely. Good call, because you can easily make your own over-sized cookie and make it healthier.

Giant Cookie Recipe with Chocolate & Hazelnuts
Whole, chopped hazelnuts add to the satisfying crunch.

Ingredients

1 cup almond flour
½ cup oat flour
½ cup cocoa powder
1/3 cup coconut sugar
1/3 cup hazelnuts, chopped
½ tsp. baking soda
½ cup melted coconut oil
1 egg white
2 droppers of hazelnut stevia

Directions

  1. In a large bowl, mix all ingredients until well combined.
  2. Place cookie dough on greased baking sheet, using 2-3 heaping spoonfuls per cookie. Space about 2 inches apart.
  3. Bake at 350°F for 10-12 minutes, or until they’ve reached your desired crispiness. Enjoy!
