Chocolate-Dipped Mango Coconut Ice Pops

If you’re the type of person who enjoys playing with flavor—this recipe is for you. A fresh take on the classic summer treat, this ice pop recipe blends the tropical tastes of mango and coconut with semi-sweet chocolate. To make this refreshing dessert, all you need are wooden craft sticks, an ice pop mold and a few healthy (yes, healthy!) ingredients. Never again crave a sugar-loaded boxed ice pop with this easy-as-pie, yet seemingly gourmet, version.

Chocolate-Dipped Mango Coconut Ice Pops

Ingredients

2 mangoes, cubed
¾ cup coconut milk
½ cup semi-sweet chocolate chips
1-½ Tbsp. coconut oil
1 Tbsp. maple syrup
Shredded coconut, optional

Directions

  1. In food processor, pulse mango, coconut milk and maple syrup until combined. Adjust ingredients depending on desired sweetness.
  2. Pour mixture into ice pop mold and freeze for 1.5 hours. Remove from freezer and insert a wooden stick into each ice pop. Return to freezer and freeze until ice pops set.
  3. Run mold under warm water for few seconds and gently pull out each ice pop.
  4. Using a double boiler or a microwave, melt chocolate chips and coconut oil until smooth.
  5. Dip each ice pop into melted chocolate, garnish with shredded coconut (immediately as the chocolate hardens quickly).
