Chocolate Pancakes with Caramel Ice Cream and Chocolate Syrup

Ingredients
1 scoop Quest Chocolate Milkshake Protein Powder
½ cup Arctic Zero Sea Salt Caramel Frozen Dessert, separated
¼ cup low-fat cottage cheese
¼ cup egg whites
2 Tbsp. Spectrum Chia & Flax Seed Decadent Blend with Coconut and Cocoa
1 Tbsp. Walden Farms Chocolate Syrup, plus extra to top
½ tsp. baking powder
1/8 tsp. cinnamon
1/8 tsp. vanilla
Directions
- In a high-speed blender, combine protein powder, half (or a ¼-cup) of frozen dessert, cottage cheese, egg white, chia and flax blend, chocolate syrup, baking powder, vanilla and cinnamon. Process until well combined.
- In a greased skillet over medium heat, separate a ¼ cup of batter and pour onto skillet. Cook until bubbles form on each side. Continue with remainder of batter, using ¼ cup for each pancake.
- Arrange pancakes in a stack and top with remaining ¼ cup of ice cream. Drizzle with as much chocolate syrup as desired.
