Chocolate-Peanut Butter Protein Cookies
Makes 12 cookies

Ingredients
½ cup oat flour
½ cup rolled oats
1 ½ scoops chocolate peanut butter whey protein powder
1/3 cup xylitol
¼ cup creamy peanut butter
2 Tbsp. cacao powder
¾ tsp. baking powder
¼ cup unsweetened almond milk
3 egg whites
Drizzle: ½ cup sugar-free chocolate chips (optional)
Directions
- Preheat oven to 350 degrees F. Line a baking pan with foil and coat it with non-stick cooking spray.
- In a medium bowl, combine peanut butter, almond milk and egg whites, whisking until smooth.
- Add remaining ingredients and stir until blended through and smooth. Dough will be thick.
- Drop about 2 tablespoons of cookie dough onto prepared baking sheet, forming about a dozen cookies. Bake 10-12 minutes.
- Let cookies cool slightly. If desired, melt chocolate chips and drizzle over cookies.
