Chocolate-Peanut Butter Protein Cookies

Are they cookies? Or could they be brownies? Decide for yourself when you bake a batch of these rich, delicious protein treats. The fudgy center is convincing of a chewy, gooey chocolate square. But then you get a hit of savory peanut butter, and it all melts in your mouth. At fewer than 100 calories per cookie, your heart will melt, too.

 Low-Cal Chocolate Peanut Butter Cookies

Chocolate-Peanut Butter Protein Cookies

Makes 12 cookies
Macros per cookie (without drizzle): 91 calories | 7 g protein | 3.8 g fat | 7.8 g carbs | 0.7 g sugar | 1.6 g fiber

Ingredients

½ cup oat flour
½ cup rolled oats
1 ½ scoops chocolate peanut butter whey protein powder
1/3 cup xylitol
¼ cup creamy peanut butter
2 Tbsp. cacao powder
¾ tsp. baking powder
¼ cup unsweetened almond milk
3 egg whites

Drizzle: ½ cup sugar-free chocolate chips (optional)

Directions

  1. Preheat oven to 350 degrees F. Line a baking pan with foil and coat it with non-stick cooking spray.
  2. In a medium bowl, combine peanut butter, almond milk and egg whites, whisking until smooth.
  3. Add remaining ingredients and stir until blended through and smooth. Dough will be thick.
  4. Drop about 2 tablespoons of cookie dough onto prepared baking sheet, forming about a dozen cookies. Bake 10-12 minutes.
  5. Let cookies cool slightly. If desired, melt chocolate chips and drizzle over cookies.
