Chocolate Peanut Butter Protein Fudge Cups

Ingredients
½ cup Vitacost Organic Smooth & Unsalted Peanut Butter
3 scoops ARO Chocolate Whey Protein Complex PLUS
1 Tbsp. Vitacost Organic Cocoa Powder
½ cup Vitacost Organic Extra Virgin Coconut Oil, melted
2 Tbsp. Vitacost Organic & Unfiltered Raw Honey
¼ cup chocolate almond milk
¼ tsp. salt
Directions
- In a microwave-safe mixing bowl, heat peanut butter for 15 seconds.
- Add remaining ingredients and whisk until smooth. Note: you can also place everything in a food processor and blend, which will create an extra-smooth and creamy mixture.
- Place 20 mini cupcake liners on a sheet pan. Spoon about 2 tablespoons of fudge batter into each cupcake liner and place in freezer to set for at least 2 hours.
- When ready to eat, remove fudge from liner and let sit at room temperature for 10 minutes.
