Chocolate Peanut Butter Quest Bar Brownie Bites

A rushed job, a rush of blood to your face, rush hour – there’s nothing that doesn’t feel hurried these days. You’re left with little time to eat a proper meal, let alone make one with healthful ingredients. The next time you find yourself rushing to the gym after work, grab a brownie (or two). Low in sugar and high in fiber, these Quest Bar-inspired chocolate-peanut butter bites are a supreme pre-workout snack.

Chocolate Peanut Butter Quest Bar Brownie Bites

Makes 4 brownie bites

Brownie

1 Chocolate Peanut Butter Quest Bar
½ scoop Giant Sports Chocolate Protein Powder
¼ cup almond meal flour
1 Tbsp. PB2 or peanut flour
1 Tbsp. all-natural peanut butter
2 Tbsp. cooked sweet potato, mashed
2 Tbsp. maple syrup
1 Tbsp. granulated stevia
1 egg white

Icing

2 Tbsp. PB2 or peanut flour
1 Tbsp. sugar-free vanilla pudding mix
5 Tbsp. water

Directions

  1. Preheat oven to 350°F. Line a baking sheet with foil and coat with nonstick cooking spray.
  2. In a medium bowl, combine all brownie ingredients except Quest Bar and blend until smooth. Place in fridge for 30 minutes.
  3. Cut Quest Bar into 4 even pieces. Remove batter from fridge.
  4. Wet your hands slightly. Take about 3 tablespoons of brownie batter and wrap it around 1 piece of Quest Bar, ensuring it covers the Quest Bar completely. Repeat with other 3 pieces.
  5. Place covered Quest Bar pieces on baking sheet and bake for about 10 minutes.
  6. Let cool while you prepare icing.
  7. In a small bowl, mix all icing ingredients together until smooth. This mixture will be thick.
  8. Spread the icing on top of each brownie bite and enjoy!
