Holiday Protein Treat: Chocolate Peppermint Brownies

With crunchy, red-and-white sugar bits sprinkled over top, it’s no surprise that peppermint bark is a seasonal icon. The creamy chocolate layers come to life even with just a few pieces of minty-fresh candy. That’s why you see this flavor combo pop up in everything from coffees to cookies. Admittedly, chocolate peppermint brownies are not original. In fact, they’re simply a copy-cat of this holiday favorite. But what makes this recipe stand out is its ability to taste sweet while offering a refreshing nutritional profile.

Peppermint Bark Protein Brownies

Ingredients

1 cup oat flour
2 scoops NLA for Her Chocolate Éclair Protein Powder
½ cup cocoa powder
½ cup coconut sugar
¼ cup coconut flour
½ cup almond milk
¼ cup unsweetened applesauce
1 dropper peppermint stevia
1 tsp. baking powder
3 candy canes, crushed
2 whole eggs

Directions

  1. Preheat oven to 350 degrees F and coat an 8” x 8” baking dish with nonstick cooking spray.
  2. In a large bowl, mix all ingredients except candy canes. Stir until smooth and well-combined.
  3. Pour batter into baking dish, top with crushed candy canes and bake for 25 minutes, or until a toothpick comes out clean.
