Ingredients

1/2 cup monk fruit sugar
1/2 cup coconut oil (in solid form)
1 tsp. vanilla
1 egg
2 scoops Amazing Grass Chocolate Peppermint Green Superfood
1 cup unsweetened cocoa powder
1/2 tsp. salt
1 cup chocolate chunks
2 Tbsp. crushed candy canes or peppermints

Directions

  1. Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
  2. In a medium bowl, add monk fruit sugar and coconut oil. Stir until well combined.
  3. Mix in egg and vanilla. Add superfood powder, cocoa powder and salt. Mix until fully combined.
  4. Fold in chocolate chunks.
  5. Roll dough into 1-inch balls and place on the prepared baking sheet.
  6. Sprinkle crushed peppermint candy on top of each cookie.
  7. Bake 10 minutes, or until cookies begin to crisp around the edges.
  8. Let cool before serving.

Baking tips:

  • These cookies will flatten out on their own – no need to smoosh down before baking.
  • Make these vegan by using an easy-to-make egg replacer.
