Cinnamon Apple-Cranberry Bake

The flavors of fall are beckoning. How will you answer the call? If you’re craving something uniquely warm and sweet without the “What did I just eat?” remorse, put away the pie pan and break out your baking sheet. You’re just a few cut-up apples, a handful of cranberries and a sprinkling of cinnamon away from enjoying the best this season has to offer. Hellooo, autumn!

Cinnamon Cranberry-Apple Bake

Cinnamon Apple-Cranberry Bake

(Makes 4 servings)

5 small apples (4 cups), cut into small chunks
1 cup cranberries, fresh or frozen
Juice of 1 whole lemon
3 Tbsp. shredded coconut
2 Tbsp. organic maple syrup
1-1/2 tsp. ground cinnamon
Pinch real salt

Directions:

  1. Preheat oven to 375 F.
  2. Line 9×13 pan with parchment paper (for easy cleanup!).
  3. Cut apples and toss in a bowl with remaining ingredients.
  4. Stir well to combine, then pour into baking pan and spread in a single layer.
  5. Bake 40-45 minutes until apples are softened.
  6. Serve warm – atop oatmeal for breakfast or paired with coconut ice cream for dessert!
