Cinnamon Roll Blondies

If blondies are a twist on brownies, is it totally outrageous to put a twist on blondies? When you’re turning them into a cinnamon roll, it can’t be a bad thing. And without all the typical teasers – like loads of butter – there’s actually nothing bad for you. Even the icing is free of refined sugar. After all, a cinnamon roll (even a cinnamon roll blondie) has to have some kind of sweet glaze. It would be outrageous not to.

Cinnamon Roll Blondies

Makes 9 blondie squares

Blondies

1/3 cup oat flour
1 scoop Cellucor Cinnamon Swirl Protein Powder
1 scoop Quest Multi-Purpose Protein Powder
3 Tbsp. SunSpire White Chocolate Chips, divided in half
6 oz. Cinnamon Roll Carbmaster’s Yogurt
1 Tbsp. melted coconut oil
1/3 cup liquid egg whites
1 jumbo egg
½ tsp. baking soda
½ tsp. baking powder
Dash of vanilla extract
Dash of cinnamon

Protein cream cheese icing (makes 2 cups)

2 Tbsp. coconut flour
1 scoop Quest Vanilla Milkshake Protein Powder
1/3 cup erythritol
½ cup almond milk
4 oz. fat-free cream cheese, at room temperature
¼ cup low-fat cottage cheese
10 drops French vanilla liquid stevia
Dash of vanilla extract
Dash of cinnamon

Directions

  1. Preheat oven to 350 degrees F and coat an 8” x 8” baking dish with non-stick cooking spray.
  2. Microwave Quest Bar for 10-15 seconds and press into leaf molds (or use cookie cutters to make shapes). Place shapes in freezer to set.
  3. Meanwhile, prepare the blondies in a large mixing bowl. Combine all blondie ingredients, except ½ chocolate chips. Stir until well-combined.
  4. Pour mixture into prepared baking dish and bake 20 minutes. Remove blondies while the batter is still slightly wet, as protein powder tends to dry out with baking.
  5. Sprinkle baked blondies with remaining chocolate chips, and then place in the fridge to cool.
  6. Prepare Protein Cream Cheese Icing in a high-speed blender or Magic Bullet. Mix cream cheese almond milk and cottage cheese first, blending until liquefied. Add remaining ingredients, blending until mixed through and has a fluffy consistency. Place in fridge to thicken.
  7. Cut blondies into 9 even squares, dollop with about a tablespoon of icing per square, garnish with Quest Bar Cinnamon Roll shapes and enjoy!
