Thoughts of carbs, calories and fat haunt us and keep us from indulging. This Cinnamon Roll Protein Bread is a mature, sophisticated alternative to the guilt-ridden childhood favorite. Loaded with all the delicious flavor of cinnamon rolls but only a fraction of the calories, this loaf is made with quality ingredients, like protein powder, coconut flour and sweet potatoes. Don’t tell your inner child that this recipe is actually healthy—she’d never believe it, anyway.

Ingredients
1 Quest Cinnamon Roll Bar
1 scoop Quest Vanilla Milkshake Protein Powder
2/3 cup Swerve Granular Erythritol
¼ cup Nutiva Coconut Flour
1/8 cup Body360 Nutritionals BodyCrunch Whey Protein Crunchies
1 tsp. baking powder
¼ tsp. cinnamon
4 oz. sweet potato, baked, skinned and mashed
2 jumbo eggs
1 small banana, mashed
Dannon Light & Fit Vanilla Greek Yogurt
¼ cup + 1 Tbsp. Sweet Spreads Cinnamon Roll Coconutter, melted and divided
1/8 tsp. vanilla
Directions
- Preheat oven to 350 degrees. Line both a cookie sheet and a loaf pan with parchment paper.
- In a microwave-safe bowl, heat Quest bar for 15 seconds. Press heated bar down onto cookie sheet into a thin rectangle and bake for about 5 minutes. In a high-speed blender or Magic Bullet, grind baked Quest bar to a powder.
- Meanwhile, in a separate microwave-safe bowl, heat 1 tablespoon of Coconutter until melted. Pour Quest bar powder into melted Coconutter. Stir to combine and set aside.
- In a large bowl, add all remaining ingredients except BodyCrunch Crunchies, and mix until well combined. Gently fold in Crunchies.
- Pour batter into prepared loaf pan and spread cinnamon roll mixture over top. Bake for 45 minutes.
