Protein Cookies with Cinnamon and Sugar

Cinnamon Sugar Protein Cookies

Makes 4 cookies

Ingredients

1 Quest Cinnamon Roll Protein Bar
24 Cinnamon and Sugar Pumpkin SuperSeedz
Swerve Granular Erythritol
4 tsp. Sweet Spreads Cinnamon Roll Coconutter

Directions

  1. Preheat the oven to 350 degrees F. Line a cookie sheet with parchment paper or a Silpat.
  2. Divide protein bar into 4 equal pieces and mold each piece into a round, cookie shape.
  3. Place cookies onto prepared cookie sheet and bake for 5 minutes.
  4. After baking, spread 1 teaspoon of Coconutter on each cookie and top with 6 pumpkin seeds. Sprinkle with erythritol before serving.
