Doughnuts made with oat flour offer a “hole” new meaning to whole grains for breakfast. Skip the mushy oatmeal and the cereal that tastes like twigs, because you can get much the same benefits from a sugary circle of nourishing carbs. It’s the whole truth and nothing but. These sweet cinnamon treats are a completely filling, protein-packed morning meal. Seriously, your nutritious diet won’t be missing a thing!
Cinnamon-Sugar Protein Doughnuts
Ingredients
½ cup oat flour (or ground rolled oats)
2 scoops vanilla cupcake protein powder
1/3 cup coconut sugar
1 tsp. cinnamon
½ tsp. baking powder
½ cup unsweetened applesauce
1 egg
Directions
- Preheat oven to 350 degrees F and coat a doughnut pan with non-stick cooking spray or coconut oil.
- In a stand mixer (or using a hand mixer in a large bowl), stir together all ingredients until smooth and well combined.
- Pour batter into greased doughnut pan. Sprinkle with extra cinnamon and sugar, if desired.
- Bake about 20 minutes, or until a toothpick comes out clean.
Note: You could turn this into a muffins recipe by simply pouring the batter into a greased or paper-lined muffin pan. Bake time is approximately the same.
