You’ll get handfuls of spicy, sweet, salty and savory all at once. It’s a blend so addictive it may actually become dinner.
Coconut-Curry Snack Mix
Ingredients
9 cups mixed organic rice, corn and wheat cereal squares
1-1/2 cups pita chips
1 cup cashews
1/2 cup coconut flakes
1/4 cup coconut oil
2 Tbsp. Worcestershire sauce
1 Tbsp. curry powder
1 tsp. onion powder
1/2 tsp. organic paprika
3/4 tsp. sea salt
Optional: Mix in any of your favorite crunchy munchies, such as wasabi peas, raisins or crackers.
Directions
- Preheat the oven to 250 degrees F.
- In a small bowl, combine curry powder, salt, onion powder and paprika.
- In a large roasting pan, melt coconut oil in oven. Remove from oven and stir in Worcestershire sauce.
- Add cereal, cashews, pita chips and coconut flakes to roasting pan, stirring until combined.
- Sprinkle spices over mixture and stir until evenly coated.
- Bake 1 hour, stirring every 15 minutes.
- Cool in a single layer on baking sheets. Keep fresh and store in an air-tight container.
