Coconut-Curry Snack Mix

You’ll get handfuls of spicy, sweet, salty and savory all at once. It’s a blend so addictive it may actually become dinner.

Coconut-Curry Snack Mix

Ingredients

9 cups mixed organic rice, corn and wheat cereal squares
1-1/2 cups pita chips
1 cup cashews
1/2 cup coconut flakes
1/4 cup coconut oil
2 Tbsp. Worcestershire sauce
1 Tbsp. curry powder
1 tsp. onion powder
1/2 tsp. organic paprika
3/4 tsp. sea salt

Optional: Mix in any of your favorite crunchy munchies, such as wasabi peas, raisins or crackers.

Directions

  1. Preheat the oven to 250 degrees F.
  2. In a small bowl, combine curry powder, salt, onion powder and paprika.
  3. In a large roasting pan, melt coconut oil in oven. Remove from oven and stir in Worcestershire sauce.
  4. Add cereal, cashews, pita chips and coconut flakes to roasting pan, stirring until combined.
  5. Sprinkle spices over mixture and stir until evenly coated.
  6. Bake 1 hour, stirring every 15 minutes.
  7. Cool in a single layer on baking sheets. Keep fresh and store in an air-tight container.
