Coconut Flour for Baking and Protein Shakes? Mais Oui!

Who knew coconut flour even existed, let alone tasted delicious?

I didn’t, but now I do. I use it to switch things up in my baking recipes. And also because of all that it is, and is not.

Coconut Secret Raw Coconut Flour is 100% organic, unrefined, unbleached, raw, gluten-free, low-glycemic, low in carbs, high in fiber and a great source of protein. Plus, it aids in digestive health and may help with maintaining healthy blood sugar levels.*

How do you use it? I use it primarily for baking, and sometimes I add it to smoothies. I’ve also heard it’s good for thickening gravy.

If you’re going to bake with coconut flour, it helps to blend it with another flour at a ratio of ¼ cup coconut flour to ¾ cups of alternative flour, since coconut flour readily absorbs moisture.

If you want to use only coconut flour in your recipe, add eggs at a ratio of four eggs to one cup of flour and increase the liquid content.
