Coconut Protein Cookies with Quest Bar Chunks

Ingredients
2/3 cup oat flour
1 scoop Quest Multipurpose Protein Powder
1 scoop Quest Vanilla Milkshake Protein Powder
½ cup reduced-fat shredded coconut
½ cup erythritol
1 tsp. baking powder
1/8 tsp. cinnamon
1 jumbo egg, beaten
2/3 cup egg whites
2 Tbsp. coconut oil, melted
1/8 tsp. vanilla extract
1 Quest Coconut Cashew Bar, cut into small, bite-sized pieces
1 Quest Vanilla Almond Crunch Bar, cut into small, bite-sized pieces
1 Quest Chocolate Chip Cookie Dough Bar, cut into small, bite-sized pieces
1 Quest S’Mores Bar, cut into small, bite-sized pieces
1 Quest Double Chocolate Chunk Bar, cut into small, bite-sized pieces
1 Quest Peanut Butter Supreme Bar, cut into small, bite-sized pieces
Directions
- Preheat oven to 350 degrees F. Line a cookie sheet with a Silpat or parchment paper.
- In a large mixing bowl, combine the flour, protein powder, shredded coconut, erythritol, baking powder and cinnamon. Mix until well combined.
- In a small bowl, combine the egg, egg whites, coconut oil and vanilla extract. Add to the dry ingredients and mix until fully incorporated.
- Fold in all Quest bar pieces.
- Scoop a heaping tablespoon for each cookie and place them on prepared cookie sheet.
- Bake for 8-9 minutes. Note: Remove cookies before they’re fully baked. Protein powder tends to dry out cookies, so you’ll want them to still look moist when you remove them from the oven.
