Once banished to novelty-shaped clay planters, chia seeds are making a comeback. But this time, they’re being used in the kitchen!
Chia seeds make a great addition to your favorite recipes, especially since they’re packed with filling fiber and nutritious omega-3s. Not sure how to cook with this superfood? Check out these easy chia recipes:
Rather than regular vegetable oil, this decadent dessert calls for chia gel and coconut oil!
How to make chia gel:
Combine â…“ cup Vitacost Chia Seeds with 2 cups water. Shake, then let sit for at least 10 minutes. Whisk, then store in the fridge – you’ll have plenty to use in this recipe and many more!
For the cake:
- ¾ cup Navitas Naturals Organic Cacao Powder
- 1 tsp NuNaturals NuStevia White Stevia Powder
- 1 ½ tsp baking powder
- 1 ½ tsp baking soda
- 1 ¾ cups King Arthur Organic Artisan All-Purpose Flour
- 1 tsp Redmond RealSalt Sea Salt
- 2 eggs
- 1 cup Blue Diamond Almond Breeze Original
- ¼ cup Vitacost Extra Virgin Certified Organic Coconut Oil
- ¼ cup chia gel
- 2 tsp Flavorganics Organic Vanilla Extract
- ¾ cup boiling water
Heat oven to 350 F and grease two round 9″ baking pans.
In large bowl, combine cacao, stevia, baking powder, baking soda, flour and salt. Beat in eggs one at a time, then stir in milk, oil, chia gel and vanilla extract – mix well to blend. Stir in boiling water.
Pour batter into pans and bake 30 minutes. Let cool, then top with your favorite frosting!

- ½ cup Woodstock Farms Organic Pure Cane Sugar (or ¼ tsp stevia powder)
- ¼ cup brown sugar
- 1 egg
- ¼ cup Vitacost Extra Virgin Certified Organic Coconut Oil
- 1 tsp Simply Organic Vanilla Extract
- 1 ½ ripe bananas, smashed
- ¼ cup Bob’s Red Mill Organic Whole Wheat Flour
- 1 cup all-purpose flour
- ½ tsp Bob’s Red Mill Baking Soda
- ½ tsp Frontier Organic Ground Cinnamon
- ¼ tsp salt
- 1 Tbsp Vitacost Chia Seeds
Preheat oven to 325 F. Grease one large loaf pan (or two mini-loaf pans).
Beat together sugar, brown sugar, egg, coconut oil and vanilla extract – then beat in bananas. In a separate bowl, combine flours, baking soda, cinnamon and salt. Stir flour mixture into sugar/oil mixture, slowly. Beat in chia seeds. Pour mixture into loaf pan(s).
Bake 40 minutes or until lightly browned.
