Molten: it’s a word that conjures up visions of gooey, chocolate desserts served under a mountain of melting ice cream at one of those hoppin’, popular Friday-night-style restaurants. What it really means is liquefied by heat. In this recipe, boiling-hot water (or an almond-milk-and-water mix) is poured over sweet, luscious coconut butter, with dark chocolate and a pinch of cinnamon stirred in. With creaminess and warmth like this, you won’t miss the calorie-heavy spongy cake or overly rich ice cream. This indulgence is best savored all on its own!

Dairy-Free Dark Chocolate Molten Mousse

1 serving

Ingredients

¼ cup melted organic dark chocolate
1-2 Tbsp. coconut butter
¼ cup boiling water or 2 Tbsp. boiling water + 2 Tbsp. unsweetened vanilla almond milk
2-4 tsp. cinnamon, to taste
Optional (for spicier taste): ground chipotle pepper or cayenne pepper, to taste

Directions 

In a small bowl, stir together all ingredients and stir. Serve immediately.
