Dark Chocolate Protein Pudding

You have to grow up some time, Peter Pan. Sure, it’s fine to believe in eating dessert first, but certain treats should stay in Never-eat-land. A prime example is those plastic cups of artificially sweet, creamy chocolate. Though a lunchbox staple when you were a kid, they’re not a respectable adult indulgence. Don’t worry. Not all magic is lost. With help from the amazing avocado fairy, you can whip up a wishful dish: dark chocolate protein pudding that’ll have you flying high for years to come.

Dark Chocolate Protein Pudding

Makes 8 servings
Macros per serving: 179 calories | 11 g protein | 17.2 g carbs | 7.9 g fat | 9.3 g sugar | 2.3 g fiber

Ingredients

1 package (about 1 lb.) silken tofu
3 scoops ARO Natural Chocolate Whey Protein Isolate
¼ cup unsweetened dark cocoa powder
1 ripe avocado
¼ cup Vitacost Organic Raw Unfiltered Honey

Toppings (optional): crushed pistachios and mini chocolate chips

Directions

  1. Drain all liquid from tofu packaging. Place tofu on layered paper towels to make sure most of the liquid is drained out.
  2. In a food processor or high-speed blender, combine tofu and remaining ingredients, processing until completely smooth.
  3. Stop to scrape bottom and sides of processor a few times to ensure everything is well combined.
  4. Spoon about 1/3 cup pudding into a bowl, add toppings (if using) and enjoy immediately. Store leftovers in refrigerator for up to 24 hours.

Substitution notes:

  • To cut calories from sugar, substitute honey with granulated stevia to taste.
