Dark Chocolate-Oat Dessert Balls

Chill Time 5 minutes

Ingredients

  • ½ cup oats
  • ½ cup coconut flakes
  • 1 Tbsp. ground flax
  • 3 Tbsp. cocoa powder
  • 8 pitted dates soaked in hot water for 5 minutes
  • 1 Tbsp. coconut oil
  • 2 Tbsp. water
  • ½ cup oats for rolling

Instructions

  1. In food processor, pulse together oats, coconut flakes, flax and cocoa powder.
  2. Add dates, coconut oil, and water. Pulse to combine.
  3. Use a tablespoon to scoop batter, then roll into ball and place on plate. Repeat for remaining batter.
  4. In dry skillet over medium-low heat, toast remaining oat until they’re golden brown (about 5 minutes).
  5. Roll balls into toasted oats.
  6. Chill until firm before serving.
