Chewy versus crunchy. Whether it’s bacon, peanut butter or cookies, you’ve picked a side. That’s cool. But when chunks of chocolate melt in your mouth, do you really care about the texture? I didn’t think so. That’s why this cookie recipe doubles up on chocolate flavor and features an underrated ingredient that makes these 10-minute treats so ooey-gooey.

Healthy Double Chocolate Chip Cookies
Garbanzo beans make these melt in your mouth while adding healthy helpings of fiber and protein.

 

Ingredients

1 can (15 oz) no-salt-added garbanzo beans
1 cup almond butter
1/3 cup coconut flour
1/3 cup cacao powder
½ cup dark chocolate chips
1/3 cup honey
1 tsp vanilla flavoring

Directions

  1. Drain, rinse and pat the beans until dry.
  2. In a food processor or blender, add beans, almond butter and honey. Blend until smooth.
  3. Add remaining ingredients (except chocolate chips) and blend again until well-combined.
  4. Transfer dough to a medium bowl and fold in chocolate chips.
  5. Roll dough into balls and place on a greased baking sheet.
  6. Bake at 325°F for about 10 minutes.
