“Do what makes you happy.” “Be somebody who makes everybody feel like a somebody.” “Strive for progress, not perfection.” Little pieces of advice are a lot like pieces of chocolate cake. They lift you up, sweeten your outlook and fill a small void you may not have known you had. But if there was actual chocolate cake involved, you may not need those motivating mantras at all. You could just think of this sweet, protein-packed reward and, suddenly, 5 a.m. spin class makes you very, very happy.
Double Chocolate Protein Cake
Ingredients
2 cups oat bran (or oat flour)
2 scoops chocolate protein powder
2/3 cup unsweetened cocoa powder
¼ cup melted coconut oil
1/3 cup honey
1 tsp. baking powder
¾ cup water
3 eggs
Icing: stevia-sweetened dark chocolate chips (optional)
Directions
- Preheat oven to 350 degrees F and coat an 8” x 8” baking pan with nonstick cooking spray or coconut oil.
- In a large bowl, combine all ingredients. Mix until well combined.
- Bake about 25 minutes, or until a toothpick comes out clean. Let cool.
- In a small bowl, melt chocolate chips. Spread melted chocolate over cooled cake, slice and eat!
