With cloud-like texture and classic pistachio gelato taste (created with splash of almond extract), you won’t even notice the extra greens that go into this beautiful mousse.
Dreamy Vegan Pistachio Mousse
1 cup raw pistachios (unsalted)
13/4 cup baby spinach, tightly packed
1 cup boiling water
½ tsp. vanilla extract
¼ cup coconut sugar
½ tsp. almond extract
2 tsp. lemon juice
Optional garnish: 3 Tbsp. chopped pistachios; 3-4 Tbsp. maple syrup
- In food processor or high-speed blender, combine all ingredients, adding water first, then pistachios, avocado, spinach, coconut sugar and remaining ingredients.
- Puree mousse on high until smooth.
- Divide mousse into four serving dishes and refrigerate for 4-5 hours, until completely chilled.
- Garnish with a drizzle of maple syrup and sprinkling of chopped pistachios.
