  1. Dice watermelon into small chunks and remove any seeds. Spread on baking sheet in single layer and freeze for at least 2 hours, or until solid.
  2. Add frozen watermelon chunks to food processor or high-speed blender. Pour in coconut milk and lime juice (plus sweetener if using). Blend until smooth and creamy, scraping down sides as needed.
  3. Scoop and serve immediately.
