Eggless Chocolate Chip Cookies

Makes 8 cookies

Ingredients

1 cups almond flour 
¼ tsp. Redmond Real Salt
5 tsp. maple syrup
2 tsp. water
1 tsp. pure vanilla extract
¼ cup mini chocolate chips (vegan, if desired)

Directions

  1. Preheat oven to 375 degrees F. Line a baking sheet with parchment paper.
  2. In a large bowl, combine almond flour with maple syrup, water, vanilla and salt. Mix until combined. Dough should be moist, so add more water if needed. Fold in chocolate chips.
  3. Scoop out dough and roll into 12 balls. Place on prepared baking sheet and flatten into cookie shapes.
  4. Bake for 7 minutes for soft cookies. For crunchier cookies, bake for 9-10 minutes or until golden brown.
