Got non-dairy milk? With favorites like almond, cashew and coconut milks, there are an abundance of dairy-free alternatives lining the shelves these days. While you’re sipping your way through soy, consider this vegan, nut-free version. Made from TigerNuts, which are actually small root vegetables, this beverage is loaded with fiber, iron and potassium. Plus, it only takes five minutes to make!

Fresh TigerNut Milk


1 cup raw TigerNuts
4 seedless dates
4 cups water


In a high-speed blender, combine ingredients until smooth.


  • 1-2 Tbsp. raw honey or maple syrup can be swapped for dates, if desired.
  • For Strawberry TigerNut Milk, add 1 cup strawberries.
  • For Chocolate TigerNut Milk, add 2 Tbsp. Vitacost Cacao Powder.
  • Use cold water for chilled milk.
