From-Scratch Pumpkin Spice Pancakes

Pumpkin spice isn’t just a flavor. It’s your obsession. From coffee and cookies to donuts and dips, you dream of the sweet-spiciness infused into your favorite foods—not just in October, but all year long. Thanks to the latte craze, there’s no shortage of instant mixes and products to help you get your fix, even in February. But you don’t have to rely on packaged, processed goods for the taste you crave. These pancakes can be on the griddle in minutes, made from ingredients you probably already have in your pantry. Add a scoop of pumpkin spice protein powder for an extra-nutritious kick!

From-Scratch Pumpkin Spice Pancakes

Makes 10 pancakes

Ingredients

1/8 tsp. pumpkin pie spice
1 cup oat flour*
1 tsp. baking powder
1 packet stevia
1 scoop pumpkin spice protein powder
¼ cup pumpkin puree
2 egg whites
1 cup unsweetened vanilla almond milk
¼ tsp. butter extract
½ tsp. vanilla extract

Homemade Pumpkin Cream
1/8 cup pumpkin puree
½ cup non-fat Greek yogurt
1/8 tsp. pumpkin pie spice
1 packet stevia

*1 cup of ground oats may also be used.

Directions

  1. In large bowl, combine all pancake ingredients and mix until smooth.
  2. Spray frying pan or griddle with non-stick cooking spray.
  3. Pour ¼ cup of batter onto pan/griddle for each pancake. Cook pancakes, flipping after bubbles appear to cook opposite side.
  4. To make pumpkin cream, combine all ingredients in mini food processor and blend until smooth. (Note: You can also simply beat ingredients together with a spoon.)
  5. Top pancakes with pumpkin cream and a sprinkle of cinnamon or maple syrup, if desired.
