German Chocolate Brownies

Made from scratch, German chocolate cake is a baker’s beast to tackle. Arguably, the richness of this dessert is worthy of all the work. The hundreds of calories per slice, on the other hand, are a bit harder to justify. But when you turn this classic into a dark chocolate, protein-packed brownie, it’s suddenly simple to make and even easier to eat!

Makes 9 brownies

Brownie

1 Double Chocolate Chunk Quest Bar
1/3 cup Spectrum Decadent Blend Chia & Flax Seed with Coconut and Cocoa
1 scoop chocolate protein powder
¼ cup organic cacao powder
¼ cup erythritol
4 oz. sweet potato, baked, peeled and mashed
2 Tbsp. almond milk
1 jumbo egg
1/3 cup liquid egg whites
1 tsp. baking powder
Dash of cinnamon
Dash of vanilla extract
2 Tbsp. reduced-fat shredded coconut (for garnish)
10 pecan halves (for garnish)
Stevia-sweetened dark chocolate chips (for garnish)

Frosting

1 Coconut Cashew Quest Bar
2 Medjool dates, soaked in water for 30 minutes, pits removed
¼ cup reduced-fat shredded coconut
1 Tbsp. almond milk
10 pecan halves, chopped

Directions

  1. Preheat oven to 350 degrees F and coat an 8” x 8” baking dish with non-stick cooking spray.
  2. Break Quest Bar into pieces and put in a microwave-safe bowl. Add almond milk and microwave for 30 seconds. Stir until smooth. Heat again, if necessary.
  3. In a food processor, combine Quest Bar mixture with egg whites, sweet potato, chia and flax blend, protein powder, cacao powder, erythritol, baking powder, cinnamon and vanilla. Blend until smooth.
  4. Pour mixture into prepared baking dish and bake 15 minutes. The brownies may still look slightly wet, but it’s best not to over-bake protein powder. Remove from the oven and allow to cool on a wire rack. Meanwhile, prepare frosting…
  5. Break Coconut Cashew Quest Bar into pieces and put in a microwave-safe bowl. Add almond milk and microwave for 30 seconds. Stir until smooth. Repeat if necessary.
  6. Add mixture to a food processor or blender with soaked dates, coconut and pecans. Blend until chunky but thoroughly combined.
  7. Spread frosting over brownies, garnish with more coconut and pecans, cut into 9 squares and serve it up!
