Who could forget Lady and Tramp splitting a plate of spaghetti, only to have their canine lips touch while slurping the same noodle? You certainly don’t have to walk on all fours to find charm in the Italian classic. And, thanks to this gluten-free recipe, featuring freshly made garlic and tigernut meatballs, it’s truly worthy of a special occasion. Bonus? The whole dish comes together in 25 minutes. So, follow your nose (or snout), to the kitchen and whip up this easy meal.

Gluten-Free Garlic-Tigernut Meatballs with Spaghetti

Serves 4-6

Ingredients

1 package Explore Asian Adzuki Bean Spaghetti
1 jar Vitacost pasta sauce

Meatballs

1 lb. ground beef
¼ cup tigernut flour
¼ cup nutritional yeast, plus more to top, if desired
1 Tbsp. garlic powder
1 Tbsp. dried parsley
1 egg
½ small yellow onion, diced
1 tsp. turmeric
¾ tsp. Redmond RealSalt
¾ tsp. black pepper
1 Tbsp. coconut oil, for cooking

Directions

  1. Prepare spaghetti according to package directions.
  2. In a large mixing bowl, combine all meatball ingredients. Using your hands or a large spoon, mix until well combined. Scoop out meatballs, about 1 inch in size.
  3. In a frying pan, heat coconut oil. Add meatballs to the pan and fry, turning them over when sides become golden brown.
  4. When the meatballs are almost browned all the way through, add pasta sauce let simmer for 3 minutes.
  5. Drain spaghetti, scoop into bowls and top each serving with meatballs and sauce. Sprinkle nutritional yeast over top, if desired.
